It's a trial and error thing. Bend it to the max and drive it. Bend it back and drive again .... repeat until you feel the power drop. Then go back to where you felt the most power. Believe it or not, bending it too much can result in a power loss. As far as the throttle body, as long as it serves its purpose, it wouldn't matter. The difference is the mount location for the TPS and the tab is on the different side. Also, the little vacuum beneath may be angled differently. It shouldn't matter, as it serves the same purpose.
